Crock-Pot Corn "Chowder"

A family-friendly and easy plant-based Crock-Pot soup recipe. This slow-cooker soup recipe is an easy plant-based diet lunch and dinner idea. This is an oil-free, non-dairy plant-based recipe in-line with a whole food, plant-based diet.

This healthy plant-based soup recipe has the regular corn chowder ingredients, but is the consistency of soup instead of chowder to save time prepping.

Since this recipe serves 8, you will need a larger 8-quart sized slow-cooker.

Ingredients

Main Ingredients:

  • 2 yellow onions diced
  • 8 c. frozen corn
  • 2 lb. Yukon gold potatoes peeled & diced (6-8 potatoes)
  • 2 tsp minced garlic
  • 8 c. vegetable broth
  • 2 tsp dried thyme
  • 1 tsp ea. salt & pepper
  • 2 bay leaves

Add before serving:

  • 1 13.5 oz can coconut milk
  • 2 Tbsp raw honey

Instructions

  1. Prepare ingredients - dice onions, peel & dice potatoes, measure corn, garlic, broth, and seasonings.
  2. Place all main ingredients (do not add coconut milk or honey yet) inside your slow-cooker. Set slow-cooker temperature to low for 6-8 hours or high for 4-6 hours.

  3. Before serving remove bay leaves. Blend half of mixture with immersion blender. Stir in coconut milk and honey.

1 cup original almond milk

  • I’m focusing on what I need to add into my diet this week rather than what I can’t/shouldn’t have. Mentally, this is a game changer for me. Does this work for you?I’m trying to eat 1 pound fresh veggies, 1 pound cooked, 1 cup beans, and 4 fruits per day (per Eat To Live). Basically if you eat anything else (like the tortillas on my plate) that’s really hard! AND I was in a hurry this morning to get my kids to swimming so I made a protein shake for breakfast and ate the other half of the baby P’s banana, which puts me behind in the fruit category. I will probably have a bowl of mixed fruit for dessert tonight.But back to my lunch, 2 H-E-B homemade delicious tortillas...they probably aren’t vegan, oh well. About 1 cup vegan refried black beans, a sprinkle of flax seeds (gotta get those Omega-3’s in), and Texas style salsa. My 1/2 pound of romaine is in the jar so I put as much of it as I could on my plate and sprinkled some of my prepped red onion and sweet peppers on top with a few carrots. And the strawberries because I didn’t eat much fruit for breakfast. Homemade ranch dressing. The other plates and bowls belong to the kiddos.Working baby steps, one meal and one day at a time.
